Green Chile Cheesy Funeral Potatoes

This amazing potato casserole is most commonly referred to as funeral potatoes and I’m not sure why. But they sure are delicious.

My family has them when we all get together, so usually at holidays. The last time we all got together, we added the green chiles and everyone loved it! It’s a small variation, but it added quite a kick!

These Green Chile Cheesy {Funeral} Potatoes would be perfect for any gathering or special dinner, even just Sunday dinner. They’re rich and cheesy and you can never have just one helping! They are perfect with one of these ham dinners, or even corned beef.

Question…should this be 2 cans (vs. 2 cups) cream of chicken soup? This sounds like a great variation on these cheesy potatoes. Thanks!
